Chicken flautus w/homemade tortilla chips

I used whatever I had on hand to make these flautus so feel free to add whatever you have too.  Here are the ingredients:

-one package flour tortillas

-chicken (i grilled mine on the Foreman but use whatever meat you have)

-spinach

-garlic

-one small chopped onion

-red pepper flakes

-bell peppers (i used a half of green)

-shredded monterrey jack cheese

-corn tortillas

Directions:

-Preheat oven to 350, and cover a baking dish with foil

-Cook chicken or use leftover chicken

-Add chicken to pan add garlic, onions, red pepper flakes, and whatever else feels right

-At the end of cooking at spinach and cheese and mix throughly

-Fill the flour tortillas with the mixure.  I used 2 chicken breast so it made 6 flautus

-Put those in the oven

-Use a cookie cutter and cut the corn tortillas into triangles.  Cut however many chips you want

-Put on a seperate cookie sheet and put on bottom rack on the oven

-It took about 20 mintues for the flautus to get done and about 10 minutes for the chips.

Here is a pic of the finished product.  ENJOY!!
