The fastest way to get a fish taco is to order one, but you never know for sure what went in it. Here’s how to make it in about 20 minutes. If you want to make the tortillas give yourself about an hour (and use my whole wheat tortilla recipe).
Fish of choice (for tacos, I prefer tilapia)
Herbs of choice
Spices of choice (in the photo I used cayenne)
1 tbsp olive oil
Onions, sliced (as much or as little as you like)
Peppers, sliced (as much or as little as you like); I like a mixture of hot and mild peppers best
Mushrooms, sliced (as much or as little as you like)
Spinach for garnish (as much or as little as you like) or cabbage or lettuce, you get the picture.
Really any kind of veggie you want I cooked some green beans with the ones in the photo.
Tortillas of choice (I prefer my Whole Wheat Tortillas, but to each his own)
I keep frozen tilapia on hand for a quick meal. Since I work 40+ hours a week, it comes in handy. If you use fresh fish your meal will cook much faster.
Put some olive oil in the bottom of pan to keep fish from sticking and turn on heat to medium.
Put fish in pan and put veggies in pan around and on top of it.
Put lid on pan and cook for about 15 minutes.
Once cooked stir up with spatula to break up fish to fill tacos.
Fill tacos with fish/veggie mixture.
Put some spinach on top and a little cheese if you like.
