The Best Cake Ball Recipe

I know there are a ton of cake ball recipes out there but i swear this is the best one.  I have tried them a few different ways and this is what works.  I make mine in the evening for 3 days because i have to work during the day and i dont get up early enough to do anything extra but if you have a day and a half you could knock them out that way too.

Here is what you need:

-Box cake mix-I used red velvet but use whatever you like or make a homemade cake if you have time for that too or know how

-1-8 ounce tub of cream cheese

-1 package of chocolate almond bark and one of white chocolate

-wax paper or parchment paper

DAY 1-make the cake according to the box directions.  I usually cook it a tad bit longer but dont burn it. I make it at night then go to bed!  Let it cool completely either way you do it

DAY 2-crumble the cake and the cream cheese into the mixer.  If you dont have a mixer it sucks to do this by hand but it is worth it.  Mix throughly.  Then roll into balls.  They dont have to be all the same size and i have used a cookie scoop and a melon baller but doing it by hand is easier and faster. Yes, there is a dirty joke that goes here but i just can’t think of it right now.  While rolling place on a wax paper lined cookie sheet or pizza pan.  I know mine looks kind of ghetto but all i had was foil.  Then place in the fridge for about 12 hours or until firm.

Day 3-in a microwave safe bowl melt two squares at a time of the chocolate almond bark and roll the cake balls into the chocolate then place back on the paper (foil) to cool.  I use a fork to roll the cake balls and pick them up then let some of the chocolate fall back into the bowl.  One they are all covered and dried.  The total process takes about 30 minutes.  Melt two squares of the white choclate and with a fork sprinkle on top.  There is no wrong way to do it.  I usually put a little more white chocolate on the “ugly” ones but those usually get eaten first.  After everything is hardened enjoy.

 

NOTES:

1. do not use icing instead of cream cheese thats just gross

2. when done dont refrigerate.  this causes them to sweat and they dont look as pretty.
