Pineapple Salsa

I bought I pineapple and am having fun eating it.  Tonight I made pineapple salsa Michelle style.  Which means with what I had on hand.

Ingredients:

2 cups chopped pineapple

1 jalapeno pepper, chopped

1 onion, chopped ( I used a green onion fresh from the garden)

2 cloves chopped garlic

1 tsp fresh oregano

salt and pepper to taste

a splash of lemon juice (because I didn’t have any limes)

Directions:

Mix all ingredients

Mix all ingredients

Mix all ingredients in a bowl and let sit for at least 10 minutes before serving.  That’s it! Enjoy!

I served mine over a salmon steak and mix greens (spinach, kale, swiss chard, radish leaves and collard greens) and it was wonderful!  I’ll be having it for lunch tomorrow as well. I can’t wait to eat it again!
