I was looking for a way to use up some left over chicken I baked the night before. I got some peppers from the garden and came up with this:
Left over chicken
I sliced each pepper in half cleaned out the seeds. I used poblano and green peppers.
I stuffed them almost full (leaving room for cheese) with chicken.
I sliced some smoked gouda and put it on top
I put in a 400 degree oven long enough to melt the cheese. I served it with black-eyed peas and quinoa.
