Easy Stuffed Rigatoni

this actually happened on accident really. It was my husband’s turn to go to the grocery store and I had written down jumbo shells and since he never cooks he just looked for the biggest noodles he could find and brought them home. It turned out to be a super great recipe though. Here is what you need at the grocery store:

1 lb of ground turkey meat (you can use beef too)

3-4 cups of fresh spinach (you can use the frozen stuff but we all know its not as good)

15 oz ricotta cheese

1/3 cup grated parmesan cheese

a little over a 1/2 cup of mozzarella (save a little for sprinkling on top)

1 egg yolk

1 tsp dried basil

garlic powder

Jumbo rigatoni shells

Pasta sauce-i posted a pic of what I used

Directions:

-Preheat your oven to 350. Cook your noodles according to the package but boil them 2-3 minutes less than suggested. Drain and set aside until cook enough to handle

-Brown meat and stir in garlic and spinach. Let cook until spinach wilts then set aside to cool

-In a medium bowl combine the cheeses, egg yolk, and basil

-Then fold in the meat/spinach mixture into the cheese filling

-Pour 3/4 cup of the pasta sauce into the bottom of the baking dish

-I put the mixture into a ziploc bag and piped it into the shells

-lay in baking dish and top with remaining sauce and cheese

-Cook for 25 minutes and viola!!

This recipe makes a Ton so I froze half and it reheats in the oven wonderfully!!
